- 1/2 cup chopped bell peppers
- 1/4 cup chopped onions
- 1 cup enchilada sauce
- 8 small flour tortillas
- Fresh cilantro for garnish
- Sliced avocado for serving
Instructions
- Preheat oven to 375°F (190°C).
- Whisk eggs in a bowl, then cook with peppers and onions in a skillet until scrambled.
- Spread a thin layer of enchilada sauce in a baking dish.
- Fill each tortilla with egg mixture and cheese, then roll up and place seam-side down in the dish.
- Pour remaining enchilada sauce over the tortillas and top with cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden.
- Garnish with cilantro and sliced avocado before serving.
