- 1 cup all-purpose flour, sifted
- 1 ½ cups granulated sugar, divided
- 12 large egg whites (about 1 ½ cups)
- 1 teaspoon cream of tartar
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
Instructions
- Preheat your oven to 350°F (175°C). Sift together the flour and ¾ cup of granulated sugar in a mixing bowl.
- Whisk egg whites in a separate bowl until foamy. Gradually add cream of tartar and salt; whip until soft peaks form. Slowly incorporate the remaining ¾ cup of sugar and whip until stiff peaks form.
- Gently fold the dry flour mixture into the whipped egg whites with a rubber spatula, being careful to maintain airiness.
- Pour the batter into an ungreased tube pan, smoothing the top with a spatula. Bake for 35-40 minutes or until golden and springs back when pressed.
Notes
- Allow the cake to cool upside down in the pan to prevent collapsing.
- Store leftovers in an airtight container at room temperature for up to 3 days.
- Freeze slices wrapped in plastic for up to 2 months for later enjoyment.
