Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, mixing well.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
- Gradually add dry ingredients to wet mixture, mixing until combined.
- In a small bowl, mix 3 tablespoons sugar with cinnamon.
- Shape dough into 1 1/2-inch balls, roll in cinnamon-sugar mixture, and place on prepared baking sheets.
- Bake for 10-12 minutes, until edges are golden but centers are soft.
- Allow cooling on wire racks before serving.
