  • 1 cup shredded carrots

  • 1/2 cup maple syrup or honey

  • 2 eggs

  • For Frosting: 8 oz cream cheese, softened, 1/4 cup powdered sugar, 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix mashed bananas, maple syrup, vegetable oil, eggs, and vanilla until well combined.
  3. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, salt, and brown sugar.
  4. Gradually add dry ingredients to wet, mixing until just combined.
  5. Fold in shredded carrots.
  6. Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted comes out clean.
  7. Meanwhile, make the frosting by beating cream cheese, powdered sugar, and vanilla until smooth.
  8. Allow the bread to cool completely, then spread frosting on top and garnish with additional shredded carrots if desired.
