Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix mashed bananas, maple syrup, vegetable oil, eggs, and vanilla until well combined.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, salt, and brown sugar.
- Gradually add dry ingredients to wet, mixing until just combined.
- Fold in shredded carrots.
- Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted comes out clean.
- Meanwhile, make the frosting by beating cream cheese, powdered sugar, and vanilla until smooth.
- Allow the bread to cool completely, then spread frosting on top and garnish with additional shredded carrots if desired.
