Instructions
- Start by heating 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and bell peppers, cooking until tender and slightly caramelized, about 5-7 minutes. Set aside.
- In the same skillet, combine the shredded chicken with the buffalo sauce and softened cream cheese. Stir until the cream cheese melts and the chicken is well coated with the spicy, creamy sauce. Season with salt and pepper to taste.
- Slice the hoagie rolls open, leaving a hinge. Stuff each roll generously with the buffalo chicken mixture, then top with shredded cheese. Return to the skillet or place on a baking sheet and toast under the broiler for 2-3 minutes until the cheese melts and the bread is crispy.
- Remove from heat, garnish with optional toppings like chopped green onions or blue cheese crumbles, and serve hot. For extra indulgence, dip into ranch dressing or your favorite sauce!
