- 1 1/2 cups fresh blueberries
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and set aside.
- In a bowl, mix flour, sugar, baking soda, and salt.
- In a separate bowl, whisk melted butter, eggs, and vanilla. Add to dry ingredients and mix until just combined.
- In a small bowl, beat softened cream cheese with powdered sugar until smooth.
- Pour half of the batter into the prepared loaf pan. Spread cream cheese mixture over the batter, then top with remaining batter. Gently swirl with a knife for marbling.
- Sprinkle blueberries on top and bake for 50-60 minutes until golden and a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack before slicing.
