  • 2 tablespoons cornstarch
  • ½ cup Kirschwasser (cherry liqueur)
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • Additional cherries and chocolate shavings for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, buttermilk, oil, and vanilla extract. Gradually mix in hot coffee until smooth.
  4. Pour the batter evenly into the prepared pans and bake for 30-35 minutes.
  5. Let the cakes cool for 10 minutes, then transfer them to a wire rack to cool completely.
  6. In a saucepan, combine cherries, sugar, cornstarch, and Kirschwasser. Cook until thickened, about 10-15 minutes.
  7. In a chilled bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
  8. Assemble the cake by placing one layer on a plate, brushing with Kirsch, spreading whipped cream and half the cherry filling, then top with the second layer and repeat.
  9. Decorate with more whipped cream, cherries, and chocolate shavings. Chill for at least 2 hours before serving.
