- 2 cups all-purpose flour

- ¾ cup Dutch-processed cocoa powder

- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot coffee (or hot water)
- 2 cups pitted sour cherries (fresh or frozen)
- 1 cup sugar (for cherry filling)
- 2 tablespoons cornstarch
- ½ cup Kirschwasser (cherry liqueur)
- 2 cups heavy cream
- ½ cup powdered sugar
- Additional cherries and chocolate shavings for decoration
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, buttermilk, oil, and vanilla extract. Gradually mix in hot coffee until smooth.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes.
- Let the cakes cool for 10 minutes, then transfer them to a wire rack to cool completely.
- In a saucepan, combine cherries, sugar, cornstarch, and Kirschwasser. Cook until thickened, about 10-15 minutes.
- In a chilled bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Assemble the cake by placing one layer on a plate, brushing with Kirsch, spreading whipped cream and half the cherry filling, then top with the second layer and repeat.
- Decorate with more whipped cream, cherries, and chocolate shavings. Chill for at least 2 hours before serving.
