- 1 pound dried red beans
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 4 garlic cloves, minced

- 1 teaspoon cayenne pepper
- 2 bay leaves
- 1 smoked sausage, sliced (optional)
- 4 cups chicken broth
- 2 cups long-grain rice
- Chopped green onions for garnish
Instructions
- Soak the beans overnight in cold water, then drain.
- In a large pot, sauté onions, bell pepper, and celery until softened.
- Add garlic, paprika, cayenne, and bay leaves; cook for 1 minute.
- Stir in soaked beans, sausage, and chicken broth. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beans are tender.
- Cook rice separately according to package instructions.
- Serve the red beans over rice, garnished with chopped green onions.
Notes
Soak beans overnight for best results. Adjust spice levels to taste. Serve with hot sauce for extra flavor.
