- 1 lb boneless, skinless chicken breasts, diced
- 4 cups chicken broth
- 1 teaspoon turmeric powder
- 1 tablespoon fresh ginger, grated
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 carrot, sliced
- 1 celery stalk, sliced
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh herbs for garnish (cilantro or parsley)
Instructions
- In a large pot, sauté onion, garlic, and ginger until fragrant.
- Add diced chicken and cook until lightly browned.
- Stir in turmeric, salt, and pepper, cooking for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add carrot and celery, reduce heat, and simmer for 20 minutes.
- Shut off heat, stir in lemon juice, garnish with herbs, and serve hot.
Notes
- For a richer flavor, sauté the vegetables before adding broth.
- You can add spinach or kale for extra greens.
