Almond flour seasoned with dill and black pepper I use as healthier breading. It crisps up like breadcrumbs. Coconut flour I use as flour layer. So thin coconut flour layer because coconut flour is extremely absorbent. Then egg wash, then finished with seasoned almond flour thick layer.
Try fresh pouting instead of pollack. Not frozen, fresh. Its as nice as Pollack. Use Gurnard, Dab, Whiting, Coalfish, Haddock, Dog fish….all not endagered and very cheap. And always stay far away from farmed fish ! Can't believe a chef uses that…its as bad as all deep frozen cheap foods. Serving farmed fish as chef is same as the chef from McDonalds….
Gordon is bit ok but why go for farmed fish, full with toxcis and medicines and then call it fresh and healthy….Farmed trout, salmon and sea bass ? Come on Gordon….Cod…endagered species ? Victoria Bass and Tilapia ? Damn so wrong…..you are a genious chef and commercial success but still far from the real world. Come here and I teach you about good healthy sustainable fish.
